BBQ pork shoulder before 35~weather

On the coastal bend of Texas it seems like winter very little comes our way but every now an then we experience 30 degree weather.

I used a brown sugar base w/cayenne and chili powder & paprika after inserting garlic cloves in the shoulder. Braised on both sides for several minutes then moved to indirect heat for 4 hrs before laying on a bed of onion in apple cider vinegar,terriyaki & worchester sauce in a dutch oven for another 4 hrs to make fall off the bone "pulled pork" for sandwiches & enchiladas. Pecan & oak wood mixed with charcoal for the cook.
